New & Improved Enjoy Life Cookies review

A few weeks ago, Enjoy Life contacted me to review their new and improved soft baked cookies. I jumped at the opportunity and was pleasantly surprised when they arrived at my door.



Enjoy Life is one special company as they are free from the top 8 allergens (soy, wheat, tree nuts, peanuts, fish, and shellfish). They are also free of potato, sesame, casein, and sulfites. Enjoy Life never changes their top 8 plus more allergy-friendly dedication. That's one awesome thing about them. No worries if they will add milk or soy to their products. They won't! 

A little back story about their cookies. Enjoy Life was one of the first products I tried when I entered the food allergy world. Not only did I stare down the aisles and feel lost. I was desperate for something sweet and safe for me. There, in a local store, I found the soft brownie type cookies and it was love ever sense. There is a slight taste difference from the old recipe to new but it's for the better (in my opinion). 

Onto the cookies...

A personal favorite! Snickerdoodle cookies that will rock your socks off! Enjoy Life Snickerdoodles have the perfect blend of sugar and cinnamon in each bite. They are great by themselves too.

Mom's favorite and she doesn't even have any food restrictions. Just like a gingerbread cookie straight from the oven, these will knock your socks off. The Gingerbread spice cookies have a unique flavor and are good by themselves or with a warm beverage. 

Dad's favorite and he has no restrictions himself yet was willing to taste. The Double chocolate brownie cookies will rock your taste buds. It's a cookie and a brownie all in one. What's more to love? Snack on them by themselves or with a safe glass of milk. However you choose, these will not disappoint.

The Chocolate Chip cookies have the traditional taste of fresh baked, soft cookies. The texture is just right and these will satisfy your sweet tooth. Whether you eat them right out of the package or warm them up, they have a great flavor! 

Two thumbs way up to Enjoy Life for their Soft Baked Cookies! Highly recommend them to anyone who is looking for a great cookie to try or as a treat. I recommend and love each flavor.

Something good about 140 characters

Twitter. A social media site that allows you to say it all in 140 characters or less. Something about it just makes me smile. Twitter is like Facebook but without all the drama. People encourage and support. It's a nice check in spot as well as a fast answer. Occasionally  or maybe once a day, someone will post a head shaking post and you just move on. 

Not only is Twitter supportive, it also is used by many companies and brands as well as twitter chats. Want to ask the CMO of Enjoy Life Foods a question? Just @EnjoyLifeCMO and he answers his own tweets! Many food allergy friendly companies tweet too and there's a great deal of information through the hashtag #foodallergy

Follow your favorite stars and feel like you're a part of the group as you get some information or tweets before the media reports them. Ooh, don't forget to follow your favorite musicians, actors, producers too. 

The possibilities are endless & there's something good about 140 characters or less.

Raspberry ganache tart

This weekend, I made two raspberry ganache tarts. They were fantastic and I got several rave reviews. Totally patting myself on the back for this one. :)
Looks like heaven I'll tell ya!
Raspberry ganache tart 
Makes: 1 tart or 9 inch pan

Ingredients 
Crust 
~ 2 bags of Chocolate cookies (such as animal crackers, teddy grahams, ect)*
~ 1.5 sticks of butter
~ 1/4 cup sugar

Filling 
~ 1 cup heavy cream
~ 1 10oz bag chocolate chips {Used Enjoy Life's}

Layers 
~ 1/4 cup raspberry jam {Used Smuckers' simply Raspberry}**
~ 2 cartons of Raspberries or fruit you have around

Directions 
Preheat oven to 350*.

In a food processor, grind cookies. If you don't have one, no worries! Place cookies in a zip lock bag and use a medal scoop or ladle and smash cookies into a fine crumble. Melt butter in large bowl. Add cookie crumbs to butter and mix together. Add sugar and mix well. In a greased tart or circular pan, add mixture and press it on the bottom and sides of the pan. Place in oven for 8 minutes. This will "set" the crust. It won't brown. Once the time is up, remove from oven and set aside.

Heat cream until it reaches a boiling point. I used the microwave. Place chocolate chips in a bowl. Pour boiling cream over chocolate chips and let it set for five minutes. This is "magic" as the chips and cream combine to make a luscious ganache. After five minutes, stir mixture. If mixture is too soupy, add 1 Tablespoon of cornstarch to thicken. Pour mixture into "tart" crust. Place pan in freezer or refrigerator for at least 30 minutes.

In a small bowl, melt jam and set aside.

Once 30 minutes are up, pour and spread jam onto tart. Add fruit and then place back in the refrigerator or freezer for at least 30 more minutes. Once pan is completely cool to touch, store in fridge before and after serving.

Sunday's dessert for the family. Used raspberries and blueberries to top.
Notes
* For top 8 free, allergy-friendly chocolate crackers, I used Orgran's Outback Animals cookies that weigh 6.2oz per bag. If you use a 10oz bag of regular teddy grahams or cookies, use 1 and 1/2 bags for crust.

** You are welcome to use a different fruit jam if you'd like. I just grabbed raspberry out the fridge first.
