This got me thinking.<br />

Food allergies are a life threatening issue that causes major effects if a food is eaten that one is allergic to. <a href="http://www.medicalnewstoday.com/articles/149636.php" target="_blank">Veganism </a>is a personal choice that as one chooses not to eat any dairy or animal by product. That is a personal choice. No one chooses to have food allergies. No one chooses or likes to experience <a href="http://www.kidswithfoodallergies.org/resourcespre.php?id=113&title=food_allergy_facts" target="_blank">anaphylaxis</a>.<br />
<br />
Restaurants have the ability to accommodate those with food allergies. Some do it better than others though. Sometimes, though, it takes research. Planning, asking, calling, emailing, and inquiring about certain foods, cross contamination, ingredients, and methods used to cook. All that happens before one can eat out. It is a daunting experience, sometimes, to trust others to cook for a food allergic. However, most can effectively do that. Restaurants that are good with food allergies earn respect of others in the food allergy community. If someone says they are "allergic" when it's just a personal choice then that does not build the awareness of food allergies. It is just lying. It discredits the term "food allergy.<br />Pure, plain, and simple. There are both food allergy aware restaurants and vegan options available for all. Researching and asking questions can help.<br />

<a href="http://www.vegasinc.com/business/2013/dec/23/south-point-culinary-staff-fears-no-food-allergies/" target="_blank">Chef Keith Norman</a> is no stranger to food allergies and has dedicated his career to providing options to those with food allergies. Norman presently serves as the food and safety manager and Assistant Executive chef at South Point hotel in Las Vegas. Having met Norman at the Food Allergy Bloggers conference last year, he truly "gets" food allergies and successfully fed many with sensitivities and anaphylactic allergens at the conference. He continues to work with the hotel to assure that those with food allergies and other food difficulties can eat safely. With his team of chefs, they successfully fed all without incident. That, in itself, is a huge accomplishment.<br />
<br />
The bottom line is simple. Food allergies are severe and have the potential to cause anaphlyaxis even with the smallest bite. Veganism is a personal choice and will not cause anaphylaxis even with the smallest molecule. While vegans have a choice to avoid all animal derivatives, food allergics must take strict avoidance to the foods that could potentially kill them. The smallest molecule, for me, will cause anaphylaxis. Respect each others beliefs and their personal life choices, yes, but do not lie about food allergies just if you are choosing not to eat something.<br /><br />

Food allergies, for me, did not develop until after the age of 15 or so for me. Don't get me wrong, I have many other allergies. Seasonal, environmental, medication, insects, pollen, and the list goes on. For many, food allergies can occur in children and some may outgrow their allergies. It totally depends on the person. Each case is different. </div>

Anyways, I did not develop food allergies until around 15. For me, they started as daily hives {later discovered to soy, wheat, and more} and my hands would swell {with shellfish|}. After doing my own research and working with my Allergist, I discovered I had many allergies to foods. Today, a single crumb or morsel can send me into anaphylaxis.</div>

My current list of food allergies includes Soy (all forms), Wheat, Gluten, Tree Nuts, Peanuts, Fish, Shellfish, Modified Starches, and Coconut (all forms). That would be six of the <a href="http://www.mayoclinic.org/diseases-conditions/food-allergy/in-depth/food-allergies/art-20045949" target="_blank">Top 8</a>.</div>

It happened to cross contamination and soy lecithin as well as fish. I had to use epi as well as have it given to me. Within minutes, my symptoms (hives, swelling, others) lessoned. If it wasn't for epinephrine, I can't think of what today would look like.</div>

Lately, I have been testing the waters with my soy lecithin allergy. I am still highly anaphylactic to soy protein and oil but have been have been having good luck with soy lecithin as the seventh or more ingredient. Meaning, if soy lecithin is the seventh ingredient or less down the ingredient list, I was okay.<br />
<br />
Last night proved that I am still highly allergic to it and that just truly stinks. Most soy allergics are okay with soy oil and lecithin {<a href="http://www.aaaai.org/ask-the-expert/safety-of-ingestion-soy-oil-and-soy-lecithin.aspx" target="_blank">source</a>}. I, unfortunately, am not.<br />
<br />
I tried a product with soy lecithin as the fifth ingredient just to see. I was fine, initially, but was covered in hives and miserable 30 minutes later. The rest of the night, I was just off thanks to the enormous amount of benedryl I took. My eyes were itchier than normal but I couldn't tell if that was related or not.<br />
<br />
So, soy lecithin is now off the table completely and it stinks. Soy lecithin is in so much. It would have been more convenience but still. A failed challenge just bites. <br />

I am a doer and a pleaser. There's no denying it. However, there was a time when I totally overwhelmed myself and said yes to everyone and everything. No more as I had no life other than in the car or on the road to the next event.

It's liberating, now. At the time when I said yes all the time, it was hard to switch to no. You may be thinking I've lost my mind but, in truth, I had to find a balance for what I wanted to do and others expected of me. </div>

Balance, for me, includes knowing my limits and when I need a break. Balance is way more than saying no. It is listening to that inner voice inside of you. It's knowing how much you can handle and moving forward. Balance is hard yet the word no is powerful! </div>

I had the opportunity to attend the <i><a href="http://foodallergybloggerconference.com/">Food Allergy Bloggers Conference</a> </i>in Las Vegas, Nevada, from November 2nd through November 4th and was seriously blown away. </div>

This conference was for people who wanted to come together for a greater good. As a whole, we all came together, shared our walks of life, and learned how to be better advocates as a food allergy community. This community not only supports but embraces each person in it. Not only was this conference unlike anything I've ever seen or heard, this conference was planned across the country, literally. Jenny is from Maine and Homa was local. It was a little intimidating, at first, when I am standing around Dr. Micheal Pistiner and Dr. John Lee of <a href="http://www.allergyhome.org/" target="_blank"><i>AllergyHome</i></a>, Dr. Paul Ehrlich & Henry Ehrlich of <i><a href="http://www.asthmaallergieschildren.com/category/dr-pauls-blog/">AsthmaAllergiesChildren.</a>com</i>, and Dr. Donna DeCosta of <a href="http://foodallergymomdoc.com/"><i>FoodAllergyMomDoc</i></a>. I mean, I am a blogger who has food allergies but I didn't have a M.D. in my name or a book to show.</div>

What I realized, though, is that we all had a purpose at this conference and that was to come together, in one location, and advocate with one another. When I registered for this conference, I was told to list all my allergies. That's a list and it included six anaphylactic allergies and that, in itself, was hard. I didn't want to be a burden on anyone. I also didn't want to suffer an allergic reaction in a different city. However, Chef Keith Norman and his wonderful chefs made everything either safe for me or had wonderful alternatives. I had zero fear while eating and did not suffer a reaction. That was a <b>huge victory!</b> </div>

Originally named Hapi Food, Corin Mullins was on a mission to make something safe for her husband's food allergies. One of their first customers said "Holy Crap...this is amazing." Brian Mullins changed the brand name and suddenly sales went from ten to one thousands bags a day. That's a 1000% increase!<br />

Holy Crap gained popularity after appearing at a kiosk during the 2010 Vancover Olympics. Popularity grew from the Olympics.<br />

After appearing on Canada's Dragon's Den (equivalent to Shark tank in the US) in 2010, Holy Crap generated over one million dollars in revenue the following week.<br />

Since then, Holy Crap is appearing in more than 2,200 stores across Canada and spreading throughout the United States. Each serving of Holy Crap cereal is 2T and 1/4 cup of liquid. Allow to sit for at least three minutes. Each bag contains <u>8 servings</u>. I tried the Holy Crap cereal as well as the Skinny B cereal with water as well as with rice milk. Both had good flavor. To have a grab and go version, make it the night before and stick it in the fridge to grab and go.<br />

Food allergies. It seems they are popping up everywhere. The common, or top 8, allergies include: soy, wheat, tree nuts, peanuts, milk, egg, fish, and shellfish <b><i>{<a href="http://www.kidswithfoodallergies.org/resourcespre.php?id=113&title=food_allergy_facts" target="_blank">Source</a>}</i></b>. Most of the news stories seem to be about peanuts and accidental ingestion causing issues <b><i>{<a href="https://www.google.com/#q=peanut%20allergy%20deaths" target="_blank">Source</a>}</i></b>.<br />
<br />
However, peanuts are not the only allergen that seems to affect people.<br />
<br />
The Oliveira family knows about other allergies than peanuts full well. Their daughter is allergic to dairy and eggs and the school keeps her safe by not allowing dairy and eggs around her <i><b>{<a href="http://www.therecord.com/news-story/2614490-severe-allergies-at-school-force-parents-to-not-pack-dairy-and-eggs-in/" target="_blank">Source</a>}</b></i>. Keeping a food allergic child safe at school is #1.<br />
<br />
Not to ruffle any feathers but peanuts are not<span style="font-family: inherit;"> the only allergen. Yes, people are affected by it (as am I) but others deal with dairy, soy, and more a</span>llergies. The media covers peanuts and nut allergies like they are the only allergy. However, it's a misconception.<br />
<br />
<span style="font-family: inherit;">Unfortunately, food allergies are on the rise and aren't going anywhere any time soon. So, instead of just catering to peanuts and </span>tree nuts, k<span style="font-family: inherit;">now that other allergies </span>exist<span style="font-family: inherit;"> and be open to protecting each food allergic individual. </span><br />
<span style="font-family: inherit;"><br /></span>
<span style="font-family: inherit;">It's not asking too much to be </span>knowledgeable<span style="font-family: inherit;"> of other allergies. Just be aware. Makes 24 muffins<br />

3 cups brown rice flour<br />
1 cup corn starch<br />
2 1/2tsp baking soda<br />
1/2tsp salt
2 cups sugar<br />
3/4 cup oil (I used canola)<br />
1/2 cup applesauce<br />
1 1/4 cup water<br />
2tsp vanilla<br />
2Tbs apple cider vinegar<br />
3/4 cup chocolate chips (used Enjoy Life's)<br />
3tsp guar gum (can use xanthan)<br />
<br />
Pre-heat oven to 350* and line tins with liners.<br />
<br />
In a large bowl, combine flour, starch, soda, salt, guar gum, and sugar. Wisk until combined and fine. <i>You could sift but I just wisk.</i> Add applesauce and stir. Add in water and then oil and stir to combine. Add vinegar and stir. Stir to combine all ingredients. Fold in chocolate chips and vanilla.<br />
<br />
Using a spoon or measuring cup, pour batter into lined tins. <i>If using a measuring cup, each tin has a little less than 1/4 cup of batter in each one.</i> Bake for 22-25 minutes. Allow to cool and store in an airtight container.<br />

Steam broccoli and set aside. If steaming in a bag, do not drain bag. Once broccoli is cooled, apply pressure to it or use a mallet to crush broccoli into small pieces.<br />

In a deep saucepan, melt butter. Add in flour and stir. Add milk. Cook until combined and consistency is thick. Stir frequently. Add pepper (to taste), garlic, salt, and cheese. Stir until cheese is melted. Add broth and broccoli. Stir and simmer for 20 minutes.<br />
