I am so tired of getting all excited about new products, only to find out that there is modified corn/tapioca/potato starch in the mix. Unmodified starches, just like corn starch, potato starch, or tapioca starch is fine for me. Modified starches trigger anaphylactic reactions for me. Why do things have to have modified starch?
Apparently, modified food starches have a purpose in the food industry, though. Starches can be added to foods to help thicken and preserve. {Source}
Why not use the plain ol' starch? I do not have the answer.
For now, I will try not to get excited and bummed in a single breath!
