After the bite: processing

It's no secret that I teach special education nor is it a secret that I LOVE every minute of it.

However, it's not all flowers and sweets in the classroom. In special education, teaching can be lots of ups and downs and unexpected turns. I've been scratched, hit, screamed at, yelled at, and have had chairs thrown at me. However, Thursday threw me into a new category.

I have now been bit and it threw me into a loop. I didn't expect it nor could I have predicted it. 
Procedures were followed, to a degree, but no one could predict that I would be attacked. Reports have been filed at the school and district level. It's hard since the attacker is a special ed student who may or may not quite get that hurting someone is wrong. She had remorse but I can't guarantee she knew it was wrong. She has multiple issues.

Today, and this weekend, I am just processing it. It is quite painful and that Tdap shot hurt just about the same. I am not afraid of this student, though. It is a roller coaster of emotions, though and I'd like off this ride.

Today, I will just process and breathe!!

Burning oil

WoW-two posts in one day, do NOT get used to it. Thought I would share my adventures from tonight's dinner preparation. It all started when I was cooking chicken in HOT oil (Canola) and I go to turn the chicken and my face and hands get completely covered in hot oil. I tried to stay calm and gently (ha-quickly) put down the lid and washed off my oil covered face/hands. Do you know that oil burns real quick? My face is okay, but my left arm is now sensitive and hurts when touched-great!!! Then I was completing the recipe and oil splashes its way into my eyes-OUCH is right. My eyes are okay. Right one hurts and itches, but it will be okay. Did not know that cooking was so dangerous. Oh well!!!

Here is the Mexican skillet that I prepared tonight
* I TBS oil
* 3-4 pieces of chicken
* 12 ounces of frozen corn
* 2 cups rice (I used brown)
* 1 cup salsa
* 2 cups water
* 1/2 cup of shredded cheese
* Sour Cream optional

Heat oil in pan. When hot, place chicken in pan and cook until cooked through. About 5-10 minutes on each side. Take chicken out of pan and set aside. Add corn, salsa, and water to pan. Bring to a boil. Reduce heat and add rice. Cook for five minutes. Add chicken back in and simmer for 5 more minutes. Add cheese and let melt. Take off heat and serve. Use Sour Cream if you want.

I found this recipe on the back on Minute Brown Rice and it is yummy!!!

Sweet and Sour update from MIA

This morning started of bright and early at 4:30 am (EST). We packed, cleaned up a bit, then got ready to hit the road. I got some awesome pictures this morning and I will post them when I get home. I am currently sitting in the airport waiting for my plane. We had a 4 hour layover today, so I have time to write. I was VERY EXCITED that MIA airport has free Wi-fi. I am a dork, I know.

So anyways, after we left our rental home, we were on our way to the airport. Dad told me to turn the AC down since it was blowing straight on him. I reached for what I thought was the AC control and was stunned at what I did. I actually cut my middle three fingers on the AC vent that WAS NOT COVERED. I thought it was the controls. It was NOT. So the morning started with bloody skin. My brother thought it was hilarious that I could not feel my middle finger on my right, dominate hand. I still can not feel it. Anyways, I have a nice sized cut on my middle finger on the nail area and skin loss on my ring and pointer fingers. My ring finger nail is a bit messed up too. What a great way to start off the morning.

The flight from our vacation spot to MIA airport was bittersweet as well. I sat next to a CUTE one year old which made my day, but there was two, two year old twins on my flight who SCREAMED for an hour before landing. The mom and dad were not together so this screaming two year old girl went back and forth between mom and dad. I was a few rows ahead of them so I did suffer as much. I felt SO SORRY for the people close to the screaming lungs. Once we landed, she finally stopped screaming. A relief was in sight!!!

After the first trip, we headed to get something to eat. The only thing I could have was fruit and I was FINE with that. My brother did tell me all that was in his lovely pizza that I could not eat though-sweet, I know. Then we hung out a bit and now are waiting for our 2:45pm (EST) flight to DFW now.

Life is pretty good right now. I am in the airport with my family and my middle finger still has no feeling. But I am hoping once I get home it will.
