Nikki mentioned to me that she loved homemade Potato soup and then Debi asked when I would post the recipe; so here we go!
To start out, I baked twelve medium size potatoes yesterday and popped them in the fridge (in their foil) until this afternoon.

Baked Potato Soup
12 medium (baked) potatoes
1.5 cups shredded cheese
4 to 6 cups milk (used 1%)***
1.5 cups Sour Cream
Salt & Pepper to taste

FIRST: start out by cutting the baked potatoes into cubes.
SECOND: Place the cubed potatoes in a pot and mash until there are little to no lumps.
THIRD: Mix in the milk, sour cream, cheese, and S&P.
FOURTH: Place pot on Medium heat for about twenty minutes*; stir occasionally.
FIFTH: Pour/ladle soup into bowls. Place lid atop pot while eating to keep pot warm.
ENJOY

* If you are making a LARGER batch, stir and heat until thoroughly heated.
** This recipe made about ten cups of soup; enough for five or six people. Now if you live in the frozen tundra or just LOVE soup, I would suggest doubling the recipe for future meals.
*** Depending on how soupy you want this soup; add as much or as little milk as you like.
Note: I only made 1/2 of the recipe due to me living on my own right now :)
